### About Us
We are a couple who fell in love with a 2-hectare property adorned with ancient “Taggiasca” olive trees, planted by Benedictine Monks in the 12th Century. This enchanting property is located in Valle de Nervia, 18035 Dolceacqua, Liguria, Italy. Our passion for this land led us to build our home here, cherish the land, and produce organic olive oil.

### Castello Mandrea Organic Olive Oil and Its History
The property remained untouched for over 20 years, meaning the soil and olive trees were never exposed to chemical treatments. We chose to honor this natural legacy, continuing a chemical-free approach to produce 100% organic olive oil.
#### Taggiasca Olive Oil
– **Reputation:** Known as one of the best olive oils in Italy due to its low acidity.
– **Acidity Level:** Our “Taggiasca” Extra Virgin 100% organic oil was measured at the Imperia Laboratories and showed an impressive acidity level of only 0.19% (compared to the acceptable level of 2.0%).

#### Harvesting and Production
– **Harvesting Period:** November to January.
– **Production Process:** The olives are delivered to the olive mill of Dolceacqua on the very day of harvest, where the oil is produced using an ancient stone-wheel mill.

### Historical and Cultural Significance
The “Valle de Nervia,” where our property is located, is a UNESCO cultural heritage site with deep historical roots.
– **Dolceacqua:** The capital of the valley, known for its Castello Doria and the famous stone bridge, which were painted by Claude Monet in 1884.
– **Historic Stone Walls:** The Benedictine Monks built historic stone walls called “Murre Secchi” (dry walls, without cement) in the 12th Century.

#### Our Property
– **Size:** 20 000 m2 with 5200 m2 of “Mure Secchi.”
– **Restoration:** Some of the walls have been rebuilt, but much more work remains to be done.

### Our Mission
We believe that these historic walls, built by hand 700 years ago, are an important source of historical education for future generations. We are dedicated to preserving and maintaining these walls to the best of our ability. This is the primary reason we rent our home and sell our olive oil.
